I pour water into a shallow baking dish, set the tails in the pan and bake at 375 for 25 minutes.
My husband favorite recipe for tails is quite different than mine. His favorite recipe is Deviled Tails. It really is quite delicious, but it is a lot more complicated than the recipe for Baked Tails.
The tails for Deviled tails is boiled until cooked, about twenty minutes, with peppercorns, a lemon, an onion, some cloves, cayenne pepper and salt. This is a really tasty boil for the tail. After the tails are cooked, the holy trinity of Cajun cooking, onion, green pepper and celery need to be sauteed with some parsley in butter.
After the onions are translucent, the sauteed vegetables are added to the bowl of meat from the tails. At this point, some finely minced hard boiled egg is added to the bowl with a raw egg, bread crumbs and Tabasco sauce. The mixture needs to stick together, if you need to add milk to accomplish this, add it one tablespoon at a time.
Pile the mixture high in the reserved shells from the tails and top with more bread crumbs. These wonderful tails then bake for twenty minutes. This recipe should be served hot out of the oven with a portion of melted butter for each person to dip every bite before eating.
